Once again, le chant d'Eole innovates with Belgian oak
Le Chant d'Eole is off to a flying start in 2021!
As part of their investments, they are proud to announce that a new partnership with the young Walloon company Barwal has just come to fruition: this Thursday, Barwal is delivering its first barrels made from Belgian oak from the finest Walloon forests to the estate.
Wallonia has resources and entrepreneurs! The Domaine has chosen to support a young Walloon company: Barwal offers quality barrels from Wallonia's finest forests. The adventure begins with barrels for maturing wine.
The Domaine du Chant d'Eole oenological committee is convinced that the terroir has the characteristics required for this type of high-quality ageing. This will lead to a typical evolution and ageing of the wine. Wines aged in barrels will develop different aromas, such as vanilla, coconut or fresh wood. But they will also have roasted or smoky aromas, providing a controlled oxidation that softens the wine. The bouquet will be more or less mellow and powerful depending on the ratio between the volume of wine and the surface area in contact with the wood in the barrel.
Hence the importance of different barrel volumes. The Domaine chose to start with Burgundy barrels (228L) but also to test 300L barrels. The origin of the wood is also important. Our first barrels are made from oak from the Rochefort national forest.
Le Chant d'Eole will thus be able to release exceptional 100% Belgian cuvées, proving that it wants to remain one of the Belgian and even global benchmarks for high-quality bubbles!
